Chef Bailey started working the hotline fulltime at BATCH, a brewery owned by Creemore Springs (formerly) in Toronto’s financial district, while attending school fulltime. Within 8 months she landed a promotion to Chef de Partie. Cibo Wine Bar, One Restaurant, are some of the few “in-betweens” to gain experience. Comfort Cuisine Catering was founded in 2017 by Chef Bailey as a side hustle, to help get through culinary school, and pay the bills. Catering to the needs of local black-lead organizations like BLM Toronto, and The Rose Underground. In 2019 she graduated from her 2-year program, earning a diploma in Culinary Management. She was part of the opening team that launched Avling Kitchen & Brewery in Leslieville, as Jr. Sous Chef in 2019, under Chef Suzanne Barr. Shortly after, she helped open True True Diner (formerly) on King St. E., as Sr. Sous Chef.
Bailey competed in the Garland Discovered Culinary Chef Competition at NellaCucina, November 18, 2019, and advanced to the semi-finals at the RCshow20, March 2020; finishing in the Top 8. She displayed her skills and ability to improvise in the kitchen, during the black-box themed challenge. Bailey has had the honor of catering two fundraising initiatives hosted while working at True True Diner, the Winter of 2019; TribeFiveDinner, whose proceeds were donated to the Red Door Family Shelter and Treemonisha Black-Opera Revival Fundraiser.
Chef Bailey believes that food should be accessible to people of all communities and individuals of all status. That is why Comfort Cuisine’s mission is to provide top notch hospitality, food with integrity and honestly priced services. She is currently attaining a bachelor’s degree in business administration at George Brown College, Centre for Hospitality & Culinary Arts.
